Lately I can't seem to get enough salad!! After returning home from an intense workout early in the morning or even when I have to squeeze one in the afternoon or evening, it is nice to know something healthy is waiting for me in the fridge for lunch or a quick snack which is why I always make extra.
This salad is an excellent source of Vitamin C, Vitamin K, Vitamin B6 & B1, folate, manganese, choline, potassium, dietary fiber, Omega-3, and Omega-6! The important amino acids in this salad are building blocks for muscle fibers. Many people take amino acid supplements before their workout but I prefer to replenish mine with a meal after my workout.
Brussels Sprouts contain something called glucosinolates, which in turn, your body uses to make something called isothiocyanate. Isothiocyanate activates cancer fighting enzymes in your body.
