Brussels Sprouts Salad with Lemon Dijon Walnut Vinaigrette

Lately I can't seem to get enough salad!! After returning home from an intense workout early in the morning or even when I have to squeeze one in the afternoon or evening, it is nice to know something healthy is waiting for me in the fridge for lunch or a quick snack which is why I always make extra.


This salad is an excellent source of Vitamin C, Vitamin K, Vitamin B6 & B1, folate, manganese, choline, potassium, dietary fiber, Omega-3, and Omega-6! The important amino acids in this salad are building blocks for muscle fibers. Many people take amino acid supplements before their workout but I prefer to replenish mine with a meal after my workout.


Brussels Sprouts contain something called glucosinolates, which in turn, your body uses to make something called isothiocyanate. Isothiocyanate activates cancer fighting enzymes in your body. The antioxidants and anti-inflammatory properties found in these delicious little green bites are key to optimal health AND they also help support your body's natural detoxification process. The black walnuts found in this salad are a powerful nutrient rich ingredient that not only help fight cancer and improve cardiovascular health but promote healthier skin with the tannins found in them.
